    Spring Run Dairy Meets Basil Bandwagon

    Basil Bandwagon Natural Market is proud to offer delicious, fresh and local milk from Spring Run Dairy Farm of Pittstown, NJ. Daniel Lyness, owner and operator, efficiently runs this dairy farm with the help of his family. Spring Run’s property is absolutely breathtaking, as the 126 acre farm contains plenty of pastures for the cows to graze on, a garden to grow crops, as well as picturesque views of the land surrounding the farm. The cows themselves are incredibly joyful and friendly, as the Lyness family works around-the-clock to make sure that they have an enriching life beyond producing milk. They do this by making sure that the cows have plenty of time to relax and graze freely in the pastures, consistent cleanliness of the cows and their barns, and that they have abundant amounts of nourishing foods. The beautiful farm in combination with the nurturing results in a farm containing cheerful and carefree cows.

    One of the most notable aspects is the careful control over farm operations especially with the cows that inhabit it. Dan’s process begins with planting and harvesting the crops that feed the cows. Spring Run ensures that everything their cows ingest is up to their high standards. The feed they grow is stored for the winter as well, to ensure that the calves and cows are getting the essential nutrients they need all year round. Spring Run believes that in order to have high quality milk, you need cows that are nutritionally balanced as well as clean, happy, and healthy. As Dan says, “the cleaner, the better!”

    Spring Run has two distinct breeds of cows, the Jersey Cow and the Holstein Cow, each with their own specific characteristics. The Jersey Cow is brown in color and much smaller than the Holstein, your classic black and white cow. The Jersey Cow produces much less milk than the Holstein, but that milk is higher in fat and protein than the milk from a Holstein. The combination of milk from the two breeds results in a flavorful and creamy whole milk.

    The pasteurization and bottling process is done completely contactless to ensure that it’s sanitary and free from outside contaminants. As soon as the raw milk is collected from the cows, it is immediately kept at 35°F, filtered out for any contaminants, and put into a pasteurizer to be cleaned and bottled. To further maintain high quality, they pasteurize at the minimum required temperature to preserve vital nutrients from being removed. The NJ State Department of Health comes once a month to analyze and test Spring Run’s milk in a laboratory, and every 3 months to inspect the condition of the cows and the pastures. To ensure that everything is properly sterilized, they made all their machines in the process completely stainless steel, as this is the easiest to keep sanitary. Everything that is used in the pasteurization and bottling process is sanitized thoroughly twice a day to ensure no bacteria is present anywhere in the facility.

    Their facility is fairly new, as the barns were built by Dan in 2013 and they have been bottling their own milk on-site since February 2021. Spring Run has streamlined their milk pasteurization and bottling processes to be as efficient as possible to continuously produce high quality dairy products. Spring Run’s self-serve farm store is open every Saturday and Sunday from 10AM-4PM for customers to purchase milk and see the cows grazing in the pastures that made it all possible.

    Pantry Banana Bread

    vegan recipe

    Ingredients

    3 very ripe bananas, mashed

    1¾ cups white whole wheat flour

    2 teaspoons baking powder

    ½ teaspoon baking soda

    1 teaspoon cinnamon, plus extra for the top

    ⅓ cup sugar (combination of maple sugar and coconut sugar)

    Avocado oil

    ½ cup walnuts, chopped

    ⅓ cup oil (combination of avocado oil and refined coconut oil) 

    ¼ teaspoon sea salt

    1 teaspoon pure vanilla extract

    Additional options: ½ cup chocolate chips or raisins


    Method

    1. Preheat the oven to 350 F.

    2. Grease the bottom and the sides of an 8 x 4-inch loaf pan. 

    3. Place the mashed bananas in a big bowl. Add the sugar, vanilla and oil. Stir well. 

    4. In a separate bowl, combine the flour, salt, cinnamon, baking powder and baking soda. Whisk to blend together.

    5. Add the banana mixture to the dry ingredients and stir until well combined. Then add the walnuts and any other additional options.

    6. Pour the banana bread batter into the loaf pan and add a little extra cinnamon on top of the mixture.

    7. Bake for 50 to 60 minutes, or until the top springs back to the touch.

    8. Let it cool before slicing and enjoy!

    Tis’ the season for roasting vegetables! The best part about roasting vegetables is that it’s quick and simple, you can use them as a side, or even as an entree. You can add all of your favorite autumn vegetables like butternut squash, pumpkin, sweet potatoes, and more!

    Ingredients

    1 1/2 Pounds Broccoli, cut into florets of even size

    3-4 Tablespoons Extra Virgin Olive Oil

    1 Tablespoon Fresh Lemon Juice (about half a lemon)

    Kosher Salt

    2-3 Garlic Cloves, minced

    Freshly Ground Black Pepper

    1/4 Cup Grated Parmesan Cheese, or to taste (try our Italian imported cheese!)


    Method

    1. Preheat oven to 425 degrees F.

    2. In a large bowl, toss broccoli and garlic with olive oil and lemon juice until lightly coated. Sprinkle salt and toss to coat.

    3. On a lined baking sheet (use olive oil, parchment paper, or aluminum foil), arrange the broccoli in a single layer.

    4. Roast for 16-20 minutes until cooked through (check by poking with a fork) and lightly browned. If you see some charring, don’t worry- those are the best parts!

    5. Put roasted broccoli back in large bowl and toss with freshly ground black pepper and grated parmesan.

    6. Serve immediately and enjoy!

    Ingredients

    ½ Cup Granulated Sugar

    ½ Cup Dark or Light Brown Sugar

    1 Egg + 1 Egg White

    ½ Cup Melted Coconut Oil

    ¾ Cup Unsweetened Applesauce

    1 ½ Cup Gluten Free Flour or All-Purpose Flour (preferably Bob’s 1-to-1 GF flour)

    ½ Teaspoon Baking Powder

    ½ Teaspoon Baking Soda

    Pinch Salt

    ½ Cup Milk; any plant based or whole milk

    ½ Cup Fresh Blueberries

    Zest 1 Lemon

    3 Tablespoons Lemon Juice

    2 Teaspoons Vanilla

    Method

    1. Beat together sugars and eggs. Add in oil and applesauce.

    2. In a small bowl, combine flour, baking powder, baking soda, and salt. Set aside.

    3. Add in milk, lemon zest, lemon juice, & vanilla to the egg/sugar mixture. Stir to combine.

    4. Add in dry ingredients & mix until fully incorporated.

    5. Fold in fresh blueberries.

    6. Grease and line a loaf pan (8”x4”) with parchment paper.

    7. Pour in batter and smooth out evenly.

    8. Bake @ 350 degrees F for 40-45 minutes until a toothpick inserted into the center of the cake comes out clean.

    9. Cool completely before slicing.

    Salsa is the perfect snack, side, topping, or even small meal that you can have all year round! The best part is that you can mix and match different fruits and veggies to make your salsa catered to your cravings. With the hot weather we’ve been having lately, we were craving something light and refreshing- so check out our recipe below for our mango avocado salsa!

    Pair with our fresh North Atlantic salmon (available Thursdays-Sundays)!

    Ingredients

    1 Avocado, halved, pitted, peeled, and diced

    1 Ripe Tommy Atkins Mango, peeled, pitted, and diced

    4 Scallions, chopped

    1/4 Cup Cilantro, finely chopped

    1 Jalapeño, seeded and minced

    2 Tablespoons Fresh Lime Juice

    1 Tablespoon Extra-Virgin Olive Oil

    1/2 Teaspoon Coarse Salt


    Method

    1. In a large bowl, combine all ingredients.

    2. Serve with chips or top on fish and enjoy!

    PRODUCE RECIPE OF THE WEEK: CAULIFLOWER SKEWERS

    This is a basic recipe which is easy to build on. By adding different spices and flavor profiles to the marinade, the skewers can represent many traditions of flavor. Add fresh herbs for a Mediterranean flavor, smoked paprika for a Spanish theme or curry for Indian style. You can replace the lemon with lime and use cilantro and chili powder which can bring in Mexican flavors as well. You can serve the skewers with a variety of sides like beans, rice, corn, couscous, lentils or a simple green salad with fresh tomatoes.

    Ingredients

    1 Large Head Cauliflower, cut into large florets

    1 Tablespoon Lemon Juice

    3 Tablespoons Olive Oil or Avocado Oil

    Salt and Pepper

    Several Wooden, Bamboo or Metal Skewers (If using natural skewers, soak for 20 minutes in water)


    Method

    1. Preheat grill to create a hot and a warm zone.

    2. Thread cauliflower florets onto skewers, diving the cauliflower evenly among the skewers.

    3. Mix oil, lemon juice, salt and pepper to create a marinade and brush onto the skewers.

    4. Grill skewers until they have obtained a nice grilled appearance. Then move to the warm zone for finishing until cauliflower is tender.

    5. Serve and enjoy!
