- Cook the rigatoni according to package directions.
- Meanwhile, heat olive oil in a large pan over medium heat. Add the crushed red pepper flakes and cook for about 30 seconds, until fragrant.
- Carefully pour in the tomato sauce and bring to a gentle simmer. Stir in the cheese and cook until fully incorporated and smooth. Season with salt and pepper to taste.
- Drain the pasta and add it directly to the sauce. Toss to coat evenly.
- Serve topped with grated Parmesan and crusty French bread, if desired.
