    Tomato and Herbed Cheese Pasta

    Servings: 4

    Ingredients
      

    • 1 pound rigatoni pasta
    • 2 tablespoons olive oil
    • ¼ teaspoon crushed red pepper flakes
    • 25 ounces roasted garlic tomato sauce
    • 4 ounces garlic and chive herbed cheese such as a soft goat's cheese
    • Salt and pepper to taste
    • Grated Parmesan cheese for serving

    Method
     

    1. Cook the rigatoni according to package directions.
    2. Meanwhile, heat olive oil in a large pan over medium heat. Add the crushed red pepper flakes and cook for about 30 seconds, until fragrant.
    3. Carefully pour in the tomato sauce and bring to a gentle simmer. Stir in the cheese and cook until fully incorporated and smooth. Season with salt and pepper to taste.
    4. Drain the pasta and add it directly to the sauce. Toss to coat evenly.
    5. Serve topped with grated Parmesan and crusty French bread, if desired.

    Scissor-Cut Tofu Pasta

    Total Time 1 hour
    Servings: 4

    Ingredients
      

    • 14 ounces silken tofu
    • 2 ¾ cup all-purpose flour
    • 1 ½ teaspoon sea salt
    • ⅓-½ cup olive oil
    • 2 cups wild assorted mushrooms trimmed
    • 1 teaspoon crushed red chilis
    • 4 large garlic cloves thinly sliced
    • 1 bunch asparagus trimmed and cut into 1" pieces
    • ½ cup frozen or fresh sweet peas
    • ½ cup shaved aged sheep's cheese optional

    Method
     

    1. Drain liquid from the tofu. In a food processor or blender, process the silken tofu until smooth.
    2. Make the pasta dough: Combine flour, blended tofu, and salt in a medium size bowl. Stir until the mixture forms a dough. Transfer dough to a lightly floured surface and knead for 8-10 minutes, using small amounts of flour to prevent sticking. Cover with a damp towel and rest for 15-20 minutes.
    3. Fill a large pot of water with salt and set over medium-high heat to bring to a boil. 
    4. Meanwhile, heat olive oil over medium-high heat in a large skillet. Add mushrooms and crushed red chiles. Sauté for 3 minutes or until starting to brown. Add garlic and cook until lightly browned. Turn turn off heat. 
    5. Using scissors, cut small pieces of dough, approximately 1-inch by ¼” in size and drop into boiling water. Cook for 3 minutes or until pasta floats then add in peas and asparagus. Cook for an additional minute.
    6. Immediately strain and add pasta to the skillet. Toss pasta to coat and season with salt and pepper to taste. Serve with an aged sheep cheese grated on top. Enjoy!

    Spring is in the air! With this asparagus pappardelle, you can have spring in your bowl, too! Whether you like pencil thin asparagus or heartier thicker stalks, asparagus is the quintessential spring vegetable. It’s the harbinger of the season. Combined with other tender green produce, dill and peas, and a light cream sauce, you know you can have dinner on the table in less than 30 minutes. The asiago cheese and shallots build a lot of flavor without overpowering the freshness of the veggies. We’ll be making this recipe all spring long as we wait to see what else our local farmers have to offer.

    Asparagus Pappardelle

    Spring is in the air! With this asparagus pappardelle, you can have spring in your bowl, too! Plus you can have dinner on the table in less than 30 minutes.
    Servings: 4

    Ingredients
      

    • 4 tablespoons olive oil
    • cup shallots minced
    • 3 Large garlic cloves minced
    • 1 pound pappardelle pasta
    • 1 pound fresh asparagus cut into 1-inch pieces (discard woody parts)
    • ½ cup frozen peas
    • cups heavy cream
    • cups asiago cheese shredded
    • ½ teaspoon sea salt
    • ½ teaspoon coarse ground black pepper
    • ½ ounce fresh dill stemmed

    Method
     

    1. Bring a large pot of salted water to a boil.
    2. Heat oil in a large saucepan and add shallots. Cook shallots until translucent then add garlic and cook for a minute. Add cream and bring to a gentle simmer. Add shredded cheese and stir until melted. Reduce heat to low.
    3. Cook pasta as directed on package. Add asparagus and peas one minute before pasta is done. Strain and add to sauce. 
    4. Toss pasta to coat and season with salt and pepper. Sprinkle with dill and serve promptly.
    5. Enjoy!

    Creamy Mushroom Pappardelle


    This comforting creamy mushroom pappardelle recipe is filling and flavorful yet not too heavy or too rich. Our Egg Pappardelle noodles are wide and strong enough to carry lots of sauce with each bite, making it a hearty meal for wintertime but also just light enough to enjoy in the spring!

    Creamy Mushroom Pappardelle

    Servings: 2

    Ingredients
      

    • 3 tablespoons butter
    • 1 shallot minced
    • 1 garlic clove minced
    • 8 ounces mushrooms
    • 1 tablespoon fresh parsley minced
    • Salt to taste
    • Pinch dried thyme
    • ¾ cup heavy cream
    • 1 ½ teaspoons corn starch
    • 1 cup grated Parmigiano Reggiano
    • 8.8 ounces Bionaturae pappardelle

    Method
     

    1. In a large skillet, sauté butter, shallot, and garlic on medium-low heat for 2 minutes.
    2. Chop the mushrooms in a food processor, then add them to the skillet with parsley and thyme, and salt to taste. Cook on low heat uncovered for 7 minutes.
    3. Whisk cream and corn starch together, add to the sauce. Cook for 2 more minutes; add cheese and cook for 1 minute.
    4. Cook bionaturae pappardelle according to instructions, then toss in the skillet and cook on medium-low for 30 seconds.
    5. Serve with more grated cheese.
    6. Enjoy!

    Homemade Squash Gnocchi

    Homemade Squash Gnocchi


    Gnocchi is a great entry point for homemade pasta! This recipe for homemade squash gnocchi don’t require a pasta maker, a food processor, or any fancy unitaskers. If you’ve played with modeling clay as a child, you can make gnocchi. Rolling out the dough into long strands may give you flashbacks to your younger years. Just make sure you only add flour if the dough is sticking. Add too much and you’ll lose the light fluffy texture of truly great gnocchi. The addition of squash puree ups the seasonal wow factor and nutrition. You can use canned pumpkin, roasted butternut, or any combination of winter squash you have on hand. 

    Homemade Squash Gnocchi

    Gnocchi is a great entry point for homemade pasta! If you played with modeling clay as a child, you can make Homemade Squash Gnocchi. The addition of squash puree ups the seasonal wow factor and nutrition. 
    Servings: 6

    Ingredients
      

    • ¾ cup ricotta
    • ¾ cup squash puree
    • 1 large egg
    • 1 ¾ cups all-purpose flour
    • ¼ teaspoon ground nutmeg
    • 1 teaspoon sea salt
    • 1 – 2 tablespoons unsalted butter
    • Fresh sage leaves

    Method
     

    1. Whisk together ricotta, squash puree, egg, salt, and nutmeg.
    2. Add flour and stir until mixture forms a soft ball; rest for 10 minutes covered.
    3. Meanwhile, heat a large pot of lightly salted water to a boil. Melt butter in a large skillet over medium-low heat, add sage leaves and swirl pan around to crisp sage and allowing butter to brown evenly. Turn off heat and set aside.
    4. Cut dough into six even portions and roll into a ½-inch log shape, using flour as necessary to keep from sticking. Cut logs into 1-inch pieces and set aside on a floured surface.
    5. Drop gnocchi into boiling water in batches and cook until they float, about 3 minutes. Carefully strain cooked gnocchi. 
    6. Put the brown butter and sage pan back over medium-low heat and add cooked gnocchi. Heat through and serve promptly.
    7. Enjoy!
