    Ramp and Zucchini Fritters

    Ramp and Zucchini Fritters

    Servings: 12 fritters

    Ingredients
      

    • 2 large zucchini
    • ½ teaspoon sea salt
    • 2 large eggs
    • cup panko breadcrumbs
    • ½ cup grated Parmesan cheese
    • 2 cups chopped ramps or thinly sliced green onions
    • 6 tablespoons all-purpose flour
    • ½ teaspoon garlic powder
    • Avocado oil for cooking
    • Sour cream or plain yogurt for serving

    Method
     

    1. Grate the zucchini using a box grater.Place in a mixing bowl, toss with sea salt, and let sit for 15 minutes to draw out excess moisture.
    2. Drain the zucchini, then transfer handfuls to cheesecloth or a clean kitchen towel and wring out as much liquid as possible.
    3. In a large bowl, combine the drained zucchini with the eggs, panko, cheese, ramps (or green onions), 4 tablespoons of flour, and garlic powder. Mix until well combined. If the mixture is very liquid, you can add up to 2 tablespoons of additional flour.
    4. Heat a skillet over medium heat and add a small amount of avocado oil. Working in batches, scoop the zucchini mixture into the skillet (about 3 tablespoons per fritter) and press flat to form 3-inch-wide fritters. Cook for 2-3 minutes per side, adjusting heat as needed to prevent burning, until golden brown and cooked through.
    5. Serve immediately while still warm with sour cream or plain yogurt.

    Summer Zucchini Chips

    Ingredients
      

    • 2 medium zucchinis cut into ¼-inch slices
    • 1 ½ cup gluten free panko breadcrumbs
    • ¾ cup grated parmesan cheese
    • ¼ cup salt-free everything bagel seasoning
    • ½ teaspoon sea salt
    • 2 large eggs whisked

    Method
     

    1. Preheat your air fryer to 400°F. On a baking tray or shallow dish, combine panko breadcrumbs, parmesan cheese, and everything seasoning. In a separate bowl, whisk the eggs.
    2. In batches, coat each zucchini slice with the egg mixture. Transfer to the breadcrumb mixture, pressing to make a nice crust on each side.
    3. Air fry zucchini slices in batches. Place slices directly in fryer basket, leaving room for the air to circulate -do not crowd the basket. Cook for 8 minutes, flipping halfway through. Promptly remove zucchini chips from fryer basket and place on a cooling rack. Sprinkle with salt while hot. Repeat with remaining zucchini slices.
    4. Serve with your favorite dipping sauce. Enjoy!

    Notes

    Can’t find everything bagel seasoning? Substitute with ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon poppyseeds, and 2 teaspoons sesame seeds.

    Once you have your zucchini cleaned and chopped- you have a world of possibilities. Here’s one of our favorite meatless recipes that easy to throw together and packs a LOT of flavor!

    Zucchini, Corn & Black Bean Tacos

     

    Ingredients:

     

    • 3 Tablespoons Oil
    • 2 Cups Frozen Corn
    • 1 Yellow Onion
    • 3 Cloves Garlic
    • 2 Red Peppers
    • 1 Jalapeno
    • 3 Medium Zucchini
    • 1 can Black Bean, rinsed
    • 1 Tablespoon Cilantro
    • Juice 1 Lime
    • 3/4 Cup of Full Fat Greek Yogurt
    • 8 Tortilla

     

    1. Heat 1/2 of the oil in a pan.
    2. Cook/caramelize Onion for 5 minutes.
    3. Add Garlic, cook for 1 min
    4. Add Red Peppers, cook for 5 minutes
    5. Add Zucchini and Corn and cook for 5 minutes
    6. Add Black Beans and Cilantro and cook for 3 minutes.
    7. Mix Lime Juice with Yogurt
    8. Toast tortillas if desired
    9. Spoon Zucchini, Corn and Black Bean mixture onto tortillas. Top with Lime/Yogurt mixture and add salsa of your choice.
