    Cranberry Wild Rice Salad

    Ingredients
      

    • 2 cups wild rice
    • 8-12 cups water
    • Pinch of salt
    • 1 pound apples cored and chopped
    • ¾ pound Brussels sprouts trimmed and thinly sliced
    • 1 bunch scallions green and white parts thinly sliced
    • ½ cup dried cranberries
    • ½ cup toasted pecans roughly chopped
    • ½ cup avocado oil
    • ½ cup apple cider vinegar
    • ¼ cup honey or agave syrup
    • ¼ cup Dijon mustard
    • ½ teaspoon marjoram (optional)
    • ½ teaspoon sea salt

    Method
     

    1. Cook wild rice with water and salt in a pot, simmering for about 50 minutes or until tender. Drain any excess water and cool.
    2. Toss cooled wild rice with apples, scallions, Brussels sprouts, pecans, and cranberries.
    3. In a small bowl, whisk together avocado oil, vinegar, honey, mustard, marjoram, and salt until emulsified. Toss with salad and serve.

    • 2 ounces apple cider
    • ¾ ounce no added sugar cranberry juice
    • 2 ounces ginger beer
    • 1 ounce bourbon optional
    • Garnishes: apple slices, cranberries, and cinnamon sticks
    Serves 32 (Party Size)
    • 64 ounces apple cider (2-32 oz bottles)
    • 24 ounces no added sugar cranberry juice (3 cups)
    • 67.6 ounces ginger beer (4-16.9 oz bottles)
    • 32 ounces bourbon (4 cups)

    Method
     

    Single Serving
    1. Place all ingredients in a tumbler then fill with ice and stir.
    2. Garnish glass with apple slices, a few cranberries and a cinnamon stick. Enjoy!
    For A Crowd
    1. Scale the recipe to make as many servings as desired and serve in a punch bowl. To keep it chilled, make ice cubes with apple cider, or fill a bundt pan with cider to make an ice ring. Place all ingredients in the punch bowl, then float the ice ring on top. Garnish with apple slices, cranberries, and cinnamon sticks. Enjoy!

    Cranberry Hot Toddy

    Servings 1

    Ingredients

    • 3 ¾ cups cranberry juice (unsweetened)
    • 1 ¼ cups water
    • 6 tbsp honey
    • ¼ cup cane sugar
    • 1 orange sliced
    • 3 cinnamon sticks
    • 10 whole cloves
    • 3-4 inches fresh ginger thinly sliced
    • 2 star anise
    • ½ cup Bourbon or Whiskey optional

    Instructions

    • In a quart-size saucepan, add all the ingredients except for the bourbon.
    • Bring mixture to a gentle simmer and cook for 5–10 minutes. Turn off heat and adjust sweetness to taste by adding more cane sugar and/or honey.
    • Carefully strain mixture and add bourbon, if using.
    • Serve in heat proof mugs and garnish with orange slices, cinnamon sticks, and fresh cranberries.

    Notes

    Substitute agave for honey to make vegan.

    Ingredients
      

    • 4 cups fresh cranberries
    • 1 cup sugar or sweetener of choice, such as honey
    • 1.5 cups water
    • zest of one orange
    • 1/4 tsp ground cinnamon

    Method
     

    1. Rinse the cranberries under cold water, removing any stems or debris.
    2. In a medium saucepan, combine the cranberries, sugar, and water. Stir well.
    3. Add the zest of one orange to the saucepan. The citrusy notes will enhance the cranberry flavor.
    4. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 10-15 minutes, or until the cranberries burst and the sauce thickens.
    5. Stir in the ground cinnamon for a touch of warmth and spice. Adjust the sugar to your taste preference if needed.
    6. Remove the saucepan from heat and let the cranberry sauce cool to room temperature. It will continue to thicken as it cools.

    Ingredients

    • Canola oil, olive oil or butter
    • 2 tablespoons dried cranberries
    • ¼ cup champagne or sparkling wine divided
    • 2 cups whipped cream
    • ¼ cup egg whites
    • ½ cup white cake mix

    Instructions

    • Coat insides of 2 large microwave-safe mugs with oil or butter.
    • Place cranberries and 1 tablespoon champagne in small bowl. Microwave on HIGH 10 seconds; drain. Divide cranberries and place in bottom of mugs.
    • Whisk together whipped cream, egg whites and cake mix in medium bowl. Place half of batter in each mug.
    • Microwave each mug individually on HIGH 1 minute 15 seconds to 1 minutes 30 seconds or until set. Invert each cake onto a plate. Spoon 1 ½ tablespoons champagne over top of each cake. Serve with additional whipped cream, if desired.
